NATIONAL FOREWORD

This Indian Standard which is identical to ISO 27971 : 2023 'Cereals and cereal products - Common wheat (Triticum aestivum L.) - Determination of alveograph properties of dough at constant hydration from commercial or test flours and test milling methodology' issued by the International Organization for Standardization (ISO), was adopted by the Bureau of Indian Standards on recommendation of the Ready-to-eat Foods and Specialized Products Sectional Committee and approval of the Food and Agriculture Division Council.

Earlier, an Indian Standard, IS 12516 (Part 4) : 1996 'Method for determination of physical characteristics of doughs made from wheat flour: Part 4 Rheological properties using an alveograph (first revision)' that was identical adoption of ISO 5530-4 : 1991, covered the test method for determination of rheological properties of dough made from wheat flour using an alveograph. Subsequently, ISO 5530-4 was withdrawn and superseded by ISO 27971. Accordingly, with the publication of this standard, IS 12516 (Part 4) : 1996 would be withdrawn.

The text of ISO standard has been approved as suitable for publication as an Indian Standard without deviations. Certain conventions are, however, not identical to those used in Indian Standards. Attention is particularly drawn to the following:

a) Wherever the words 'International Standard' appear referring to this standard, they should be read as 'Indian Standard'; and

b) Comma (,) has been used as a decimal marker while in Indian Standards, the current practice is to use a point (.) as the decimal marker.
