NATIONAL FOREWORD

This Indian Standard (Second Revision) which is identical with 1SO 5492 : 2008 ‘Sensory analysis - Vocabulary’ issued by the International Organization for Standardization (ISO) was adopted by the Bureau of Indian Standards on the recommendation of the Test Methods for Food Products Sectional Committee and approval of Food and Agriculture Division Council.

This standard was first published in 1969 in two parts as IS 5126 (Part 1) : 1969 ‘Glossary of general terms for sensory evaluation of foods: Part 1 Methodology’ and IS 5126 (Part 2) : 1969 ‘Glossary of general terms for sensory evaluation of foods: Part 2 Quality characteristics’. Subsequently, it was revised in 1996 to amalgamate both the parts in one standard and align with ISO 5492 : 1992 ‘Sensory analysis - Vocabulary’. This revision has been undertaken to align with the latest version of ISO 5492 which has replaced ISO 5492 : 1992 after incorporation of technical changes.

The text of ISO Standard has been approved as suitable for publication as an Indian Standard without deviations. Certain conventions are however not identical to those used in Indian Standards. Attention is particularly drawn to the following:

a) Wherever the words ‘International Standard’ appear referring to this standard, they should be read as ‘Indian Standard’.

b) Comma (,) has been used as a decimal marker while in Indian Standards, the current practice is to use a point (.) as the decimal marker
