This Indian Standard (First Revision) which is identical withISO 5531 : 1978 `Wheat flour-Determination of wet gluten issued bythe International Organization for Standardization (ISO) wasadopted by the Bureau of Indian Standards on the recommendation ofthe Foodgrain and Foodgrain Industries and Starches SectionalCommittee (FAD 16) and approval of the Food and AgricultureDivision Council.

This standard was first published in 1976. This revision hasbeen brought out to harmonize it with the International Standard.
